I love an easy, quick lunch and once I found out the flour and yogurt hack for a quick dough, it made things so much easier. It’s delicious, fluffy and crispy and only takes 30 minutes to make!

The Dough

Just 4 ingredients

  • All-Purpose Flour (See below for gluten free)
  • Thick yogurt or Greek yogurt (PLAIN)
  • Baking Powder
  • Salt
    • Optional – Seasonings

How it works

The baking powder acts as a leaven to allow the dough to puff up! Except, there’s no waiting time like with yeast. you can mix it up, shape and bake within 30 minutes.

It creates a nice fluffy dough on the inside and the outside is crispy!

Can you use Gluten-Free Flour?

Yes! I have used King Arthurs measure-for-measure gluten free flour and it worked great! It’s not as pliable so you just need to work carefully, but it still works!

These were the glute-free ones and they turned out so good! Still fluffy on the inside and crunchy on the outside. SO GOOD.

Pizza? Pizza pocket? Pizza rolls? what else??

You can use this dough for whatever you’d like. Roll it to make a pizza, Roll and shape for pizza pockets, pizza rolls, anything you can think of. The dough is slightly stickier, so shape carefully. You can also roll it out, add any filling (like below I did buffalo chicken and cheese) and I folded it up and pan fried in a skillet on both sides until crispy! Then I dipped in it ranch.

What yogurt to use?

You can use either regular yogurt or greek yogurt. You just want to make sure it is

  • Thick
  • Plain

That’s it! You don’t want to use thin yogurt because it won’t work very well. And definitely don’t use flavored!

It’s so easy, your kids can help!

My daughter loves helping in the kitchen, and she’s a PRO at making pizza pockets!!

4 Ingredient High Protein Pizza Pockets

Makes 2 pizza pockets or 4 small ones
Servings: 1 Person

Ingredients
  

  • 2/3 C Plain greek yogurt
  • 2/3 C All- Purpose Flour
  • 1/2 tsp Baking powder
  • 1/2 tsp salt
  • 1 tsp Italian seasoning

Method
 

Preheat oven to 375
    Make the dough
    1. Combine the flour, baking powder, salt and seasonings on a dough mat or counter top.
    2. Make an Indent in the flour mixture and add the yogurt. Cover the yogurt with flour and start carefully folding the yogurt until you've formed a dough, knead for a couple minutes, cover and prepare your toppings.
    3. Divide the dough into 2 or 4 pieces depending on how big you want them.
    4. Roll each ball out on a lightly floured surface. For 2 pockets, make them 8 inch round and for 4 pocket, make them 6 inch rounds.
    5. on one half, leaving 1/2in around the sides, Add a little sauce, cheese and the rest of your toppings.
    6. Fold over the empty half and pinch the edges together, then twist and pinch the edges all the way around.
    7. Poke holes in the top with a fork to allow for ventilation.
    8. Place them on an oiled baking tray and bake them for 12-15 minutes until golden brown.
