Baleadas (Honduras)

Ingredients
  

Tortillas
  • 2 c Flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • TBSP veg shortening
  • warm water
Beans
  • 1/4 red onion
  • 4 garlic cloves
  • 1 bag Central american red beans
Top
  • scrambled eggs
  • cotija cheese
  • Honduran or mexican sour cream
  • chorizo optional

Method
 

Beans
  1. Rinse beans and pick the bad ones out. Rinse really well then let them soak overnight.
  2. In a large pot, add the beans, chopped onion, garlic and fill with water and simmer 2-3 hours until fully softened. or pressure cook on high for 25min or 1hr if unsoaked.
  3. Blend the beans, onions and garlic with 1c of the liquid until smooth
  4. pour into a skillet with some lard or oil and stir on medium ish heat until the beans have thickened.
Tortillas
  1. Mix the flour salt and baking powder then pinch in the shortening then and add the warm water little by little until it forms a dough.
  2. knead 8 minutes then divide dough in equal balls and roll until very round
  3. coat each ball with some oil and cover plastic wrap and rest 15min
  4. grab a ball and shape into disk and thin it out. put on hot griddle and cook on both sides until puffy.
Plate up
  1. on a tortilla, Add refined beans, scrambled eggs, cooked chorizo, cheese and cream. Enjoy!
