These sourdough discard mini banana muffins are my kids absolute favorite. The sweet banana makes these taste like banana bread and is perfect paired with some butter!

Method
- Combine the sourdough discard, eggs, mashed banana, milk, melted butter and both sugars in a bowl and whisk until combined.
- In a bigger, separate bowl, combine flour, baking powder, baking soda and salt and mix well.
- Pour the wet ingredient mixture into the dry ingredients and mix well but don’t over mix!
- Spray mini muffin pans scoop in filling them about 3/4 of the way and then bake at 350° for 12min!
- This Makes 4.5 dozen (53 mini muffins for me)
