These sourdough discard mini banana muffins are my kids absolute favorite. The sweet banana makes these taste like banana bread and is perfect paired with some butter!

Sourdough Discard Banana Mini Muffins

Ingredients
  

  • 150 g discard
  • 2 eggs
  • 1/2 c mixed berries mash or 2 bananas mashed
  • 1/2 c milk
  • 1 stick melted butter
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 1 tsp Extract vanilla or flavored
  • 2.5 c flour
  • 1.5 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 tsp salt

Method
 

  1. Combine the sourdough discard, eggs, mashed banana, milk, melted butter and both sugars in a bowl and whisk until combined.
  2. In a bigger, separate bowl, combine flour, baking powder, baking soda and salt and mix well.
  3. Pour the wet ingredient mixture into the dry ingredients and mix well but don’t over mix!
  4. Spray mini muffin pans scoop in filling them about 3/4 of the way and then bake at 350° for 12min!
  5. This Makes 4.5 dozen (53 mini muffins for me)
