Draniki are traditional Belarusian potato pancakes that are crispy on the outside and tender on the inside. Made from finely grated raw potatoes, they’re mixed with onion, a small amount of flour, and egg, then pan-fried until golden and perfectly crisp.

What makes draniki special is their simplicity. The potatoes are grated very finely, almost to a puree, which helps the pancakes hold together and creates their signature soft, creamy interior. Onions add subtle sweetness, while frying gives them a rich, savory crunch.
Draniki are a staple of Belarusian home cooking and are often served hot with sour cream, butter, or hearty toppings like machanka, a thick pork sauce meant for dipping. They’re enjoyed for breakfast, lunch, or dinner and are especially popular during colder months.
