YES you can make this at home and it’s so so easy!

Method
- In a mixing bowl whisk together warm water, yeast, sugar, and 150g of the bread flour until smooth, cover for 15 minutes until it gets foamy and bubbly
- Add the olive oil, yogurt and salt and whisk until smooth
- Add the rest of the flour and mix, then start kneading. Knead for 8 minutes. add flour if you need. It should be smooth and slightly tacky. Place the dough in a lightly oiled bowl, cover and rest to rise 1.5-2 hours.
- Flip the dough on the counter and separate into 8 equal pieces. roll them into balls and rest 5 minutes.
- On a floured surface, roll each ball into a 3/4 inch thick circle. once they're all rolled out, cover with a towel and rest again for 20 minutes until slightly puffy.
- In a skillet on medium heat, rub the skillet with olive oil with a paper towel just to get a little oil all over, soak up the excess.
- Place one of your pita dough circles on the skillet and cook for 15 seconds, then flip and cook 1 minute, flip again and cook 1 minute. flip once more for 15 seconds then remove. It may puff up, that's a good thing! you want that. it creates a pocket. Repeat the cooking process with the remaining pita dough. Allow to cool for a few minutes and enjoy!
