Kaspressknodelsuppe Is a bread dumpling in a delicious broth perfect for cold weather, when you’re sick or anytime really it’s super yummy!

This is such a great dish to serve with some salad! Add some protein in your salad and it’s perfection in a meal. Nice and light but so delicious. I did not know what to expect but I LOVED this and it will be my go to recover meal after or during a sickness!

You can use any bread really, preferably not fresh. It’s perfect if you have leftover, even stale bread about to go bad! Chop it in to cubes and you’re ready to go! I used a Baguette and it was perfect!

The broth can be any broth you’d like. I just warmed up some chicken broth but next time I want to make homemade broth to go along with it!

In the video above I also show that I made Kaiserschmarrn which is fluffy, pancake style batter. You whip the egg whites into peaks and fold into the batter! it gets poured on a buttered skillet, then flipped and scrambled up like eggs! Topped with some powdered sugar and to make it better, add a fruit compote or jam! SO yummy and better than pancakes in my opinion. That will be a separate post!

Now let’s get into the recipe!

Kaspressknodelsuppe (Austria)

Course: Main Course, Side Dish
Cuisine: Austrian

Ingredients
  

  • 500 g Cubes of bread Preferably not fresh.
  • 3 c Mountain Cheese
  • 1 Yellow Onion Finely Chopped
  • 2/3 c Butter
  • 1/2 C Milk
  • 6 Eggs
  • 1 tsp Salt
  • 1 tsp Pepper
  • Parsley Finely Chopped

Method
 

Cook the onions
  1. In a small skillet melt the butter and add the onions and sauté until they are soft.
  2. In a large bowl add the cubed bread, (I used a baguette) onion mixture, eggs, cheese, parsley, salt and pepper. Cover the bowl and rest in the fridge for 30 minutes.
  3. After they rested, Take a small piece (I used a cookie scoop) roll into balls then flatten them. Pan fry each one for 2-4 minutes on each side.
  4. These are served with broth! whatever broth you want. I just used some chicken broth from a carton and warmed it up, but homemade broth would be best I bet!
