Kaspressknodelsuppe (Austria)

Ingredients
  

  • 500 g Cubes of bread Preferably not fresh.
  • 3 c Mountain Cheese
  • 1 Yellow Onion Finely Chopped
  • 2/3 c Butter
  • 1/2 C Milk
  • 6 Eggs
  • 1 tsp Salt
  • 1 tsp Pepper
  • Parsley Finely Chopped

Method
 

Cook the onions
  1. In a small skillet melt the butter and add the onions and sauté until they are soft.
  2. In a large bowl add the cubed bread, (I used a baguette) onion mixture, eggs, cheese, parsley, salt and pepper. Cover the bowl and rest in the fridge for 30 minutes.
  3. After they rested, Take a small piece (I used a cookie scoop) roll into balls then flatten them. Pan fry each one for 2-4 minutes on each side.
  4. These are served with broth! whatever broth you want. I just used some chicken broth from a carton and warmed it up, but homemade broth would be best I bet!
