Kaiserchmarrn is almost like a pancake batter, except the egg whites are whipped to peaks and folded into the rest of the batter making a fluffy batter and fluffy kaiserschmarrn!

Topping can be powdered sugar, fresh fruit, fruit compote, Nutella, etc! options are almost endless.

This is something I have already made over and over because I love them more than normal pancakes! They’re just so fluffy and delicious!

The other meal I made from Austria this week was Kaspressknodelsuppe. it’s a bread dumpling made from stale bread (I used a baguette) And they are served with broth! So light and so delicious!

This is also just so easy to throw together for breakfast or dessert!

Kaiserschmarrn (Austria)

Prep Time 15 minutes
Cook Time 10 minutes
Servings: 4 People
Course: Breakfast, Dessert

Ingredients
  

  • 3 Eggs Separated
  • 1.5 C Flour
  • 2.5 tbsp Granulated Sugar
  • Pinch Salt
  • 300 ml Milk
  • 1.4 Tbsp Melted Butter
  • Dab Butter for skillet
  • Powdered Sugar
  • Fruit Compote If Desired

Method
 

  1. Separate your eggs. In a stand mixer or electric hand whisk, whisk the egg whites until they form peaks. Add the egg yolks to a separate bowl, whisk with the sugar, vanilla, salt, melted butter, flour and milk until fully combined
  2. Add the whipped egg whites to the egg yolk mixture and fold it in until it's well combined, don’t over mix and don’t mix too harsh, you want it to stay fluffy.
  3. Melt around 30g butter in a skillet, then pour half the batter in. allow to cook for 8 minutes on medium ish heat, or until the bottom is lightly browned.
  4. With a spatula, break up the batter into 4 pieces and flip each piece. Then start scrambling them up and cook for just a couple more minutes. sprinkle in some granulated sugar and mix a little. Pour into a bowl or plates and repeat with the other half of the batter.
  5. Serve with powdered sugar and/or Fruit compote, Nutella, fresh fruit, anything you'd like!
