There are some recipes that feel like home, no matter how many times you make them. Banana bread is one of those for me. It’s the recipe you turn to when the bananas on the counter are past their prime, when you want something comforting but not complicated, or when your house just needs to smell warm and inviting.
This is one of those “ish” recipes, the kind you make from memory after the first time. The kind where you don’t overthink it, you just bake. Soft, tender, lightly sweet, and perfect sliced warm with a little butter melting into the crumb.

If you’ve ever wondered why banana bread recipes always say “very ripe bananas,” there’s a reason—and it makes all the difference.
As bananas ripen, their starches convert into natural sugars. That means:
- More sweetness without adding extra sugar
- Better banana flavor that actually comes through after baking
- Extra moisture, which keeps the bread soft and tender
Those brown, spotty bananas that look like they should be tossed? They’re actually at their peak for baking. The darker and softer they are, the better your banana bread will be. If they mash easily with a fork, you’re in the sweet spot.
Ingredients You’ll Need
This banana bread is made with pantry staples you likely already have on hand:
- Softened butter
- Sugar or maple syrup
- One egg
- Vanilla extract
- Two ripe bananas, mashed
- Milk
- All-purpose flour
- Baking powder
- Baking soda
- Salt
Sugar vs. Maple Syrup (Both Work!)
This recipe is flexible, which is one of the reasons I love it.
You can use granulated sugar, or you can swap it for pure maple syrup if you prefer a more natural sweetness. I am refined sugar free, so I try to make these swaps when I can.
Important note:
If you’re using maple syrup, use ¾ cup of maple syrup in place of 1 cup of sugar.
Because maple syrup is a liquid sweetener, using less keeps the batter from becoming too wet while still adding plenty of sweetness and a subtle, cozy flavor.
One more crucial tip:
Make sure your maple syrup is room temperature.
Cold maple syrup can chill the softened butter, which prevents it from creaming properly. When the butter and sweetener don’t blend smoothly, the texture of your bread can suffer. Room-temperature ingredients help everything come together light, smooth, and evenly mixed.
Bringing the Batter Together
Start by creaming the softened butter with your sugar or room-temperature maple syrup until it’s light and fluffy. This step helps create a tender crumb and gives the bread its soft texture.
Mix in the egg and vanilla extract, then fold in the mashed bananas and milk. The batter will start to smell incredible already, don’t worry if it looks a little rustic. Banana bread is forgiving.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix just until combined. Overmixing can make banana bread dense, so stop as soon as you don’t see dry flour anymore.
Baking the Banana Bread
Pour the batter into a greased loaf pan, smoothing the top gently.
Bake at 350°F for 50–55 minutes, or until:
- The top is golden
- A toothpick inserted in the center comes out clean or with a few moist crumbs
Every oven is a little different, so start checking around the 50-minute mark.
Let the bread cool slightly in the pan before removing, but not too long, because warm banana bread is where the magic happens.
NOTE:
You can also make these into muffins or mini muffins!
Bake for 20-30 minutes for muffins , checking for doneness with a toothpick. It should come out clean with moist crumbs, not batter.
Jumbo muffins may take 23-26 minutes while smaller ones will be done sooner.

The Best Way to Serve It
Banana bread is good any time, but it’s best served warm.
Slice it while it’s still slightly warm and add:
- A pat of butter
- Let it melt right into the bread
- Maybe sprinkle a tiny pinch of salt on top if you’re feeling fancy
It’s simple, comforting, and exactly how banana bread is meant to be enjoyed.

- Pre-heat oven to 350 degrees F
- In a stand mixer or bowl, cream together the butter and sugarMix in the egg, vanilla, mashed banana and milk
- In a separate bowl, combine the flour, salt, baking powder and baking soda
- add the flour mixture to the mixer and combine everything without over mixing, making sure to scrap down the sides to get all the flour mixed in.
- Grease a bread pan with some butter and transfer the batter to the pan,
- Bake for 50-55 minutes
