Let me preface this by saying… this is not authentic. I did my best this day and followed a couple recipes and it did turn out really good BUT I got a lot of comments with lots of different opinions so while it was delicious, do your own research and try out recipes!
I made this beef stew and Ugali! Ugali is a corn flour fufu. Fufu is made with cassava but to my surprise there’s a corn flour version called Ugali and ITS SO GOOD! The chewiness is just amazing with the food. And something about eating with your hands makes the food taste better… idk! I will be making Ugali again!
I will say, my husband loved it, but for some reason, I’m not a fan of garam masala seasoning. I’m not sure what it is. I used to love eating a dish from my local Indian restaurant.. but I ate it SO much during my twin pregnancy that I started to get an aversion to it and I haven’t been able to bounce back from it and it makes me so sad because I used to CRAVE it. If i made this again I would probably just leave that seasoning out. Otherwise this was really good!
I’ve never eaten or used plantains before so I had no idea what to expect. They were good! Reminded me of potatoes! I got a lot of comments saying to fry the plantains and serve them on the side so I will be doing that next time!
I also think a good side of collard greens would be so good with this dish. Do whatever you’d like! i’ll share what I did for week 6 of my series. Rwanda!

- Season the stew meat with chili powder, turmeric, garam masala, crushed ginger and garlic and salt. Sit for 15 minutes.
- Slice the tomatoes and onions thin and sauté them until they are soft, then peel and slice the plantains and add those in as well. Add in the remaining stew ingredients.. Crushed garlic, Cumin, Garam masala, Cinnamon, Curry, Turmeric, Coriander, Bay leaves. then add in the chicken and sear for a few minutes.
- once the outsides are turning brown on the stew meat, add in 3 cups of water and 2 beef bouillon cubes.
- Bring to a boil and then Allow to simmer on low for 2 hours.
- When it's ready, now we make the ugali!
- Boil water in a pot, I used about a half pot of water. bring to a light boil and start adding corn flour a little at a time. it will be very thick, beat it with the wooden spoon keep going. I will Link the video I used to learn! When it's done, serve the beef stew with the ugali.To shape, I put some in a bowl, squished it down and flipped it upside down and shape it into a ball. Grab a little of the ugali with your fingers, make an indent and pick up your food with it!
