I CRAVE these from Panera and knew I needed to make them at home and what better way than using our sourdough discard. These are perfectly soft and flakey and sooooo yummy.

Sourdough Discard Cranberry Orange Scones

Prep Time 30 minutes
Cook Time 20 minutes

Ingredients
  

Scones
  • 200 g Sourdough Starter Discard (cold)
  • 1 teaspoon Milk
  • 1 teaspoon Orange juice I use fresh from the orange
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 2 + 1/4 Cup All purpose flour
  • 1/4 teaspoon Salt
  • 2 teaspoons Baking Powder
  • 1/2 Cup Granulated Sugar
  • 1 Stick Frozen Butter
Glaze
  • 1 Cup Powdered Sugar
  • 1 tbsp Orange zest
  • 1 teaspoon Orange juice
  • 1 teaspoon milk more if needed

Method
 

  1. In a bowl, whisk together discard, milk, Orange juice, egg and vanilla, cover and place in fridge
  2. In a large bowl combine flour, salt, baking powder and sugar and set aside- Zest 1 orange and mix with 2TBSP sugar and set aside
  3. Grate your 1 stick of butter (using large hole grater) and add into flour mixture, start mixing and pinching until well combined. Next add the sugared orange zest and cranberries in the flour mixture and mix well
  4. Pour the discard mixture into the flour mixture and mix the best you can with a spoon, turn onto the counter and start pressing together and bringing the dough together with your hands. Once it’s together and no dry spots are left, shape into an 8in disk and separate into 8 equal triangle pieces (like a pizza) 
  5. Place the scones on a parchment lined baking sheet and freeze for 20 minutes. Preheat oven to 400°
  6. Bake the scones for 20 minutes.
  7. While they’re cooling, make the glaze. Combine 1C powdered sugar, 1 tablespoon of orange zest, 1 teaspoon of milk and 1 teaspoon of orange juice. Add a little more Oj or milk to get the right consistency then drizzle over all the cooled scones
  8. Enjoy!
